These refreshing non-alcoholic summer drinks are sure to brighten up your day. They’re packed with fresh fruit and other tasty, nutritious ingredients.

 

Choose from Litchi Lime and Vanilla Fizz, frozen ‘Margaritas’ or Blueberry and Tonic Popsicles – or create all three, and see which one you like the best. You’ll need a blender for these recipes. Litchi Lime and Vanilla Fizz

 

INGREDIENTS

1 x 560g tin litchis in syrup

1 tsp vanilla essence or extract

3 limes, sliced in wedges

Mint leaves and fresh cherries (optional), to garnish

1L sparkling water, chilled, to top up

 

METHOD

In a blender, puree the tinned litchis and the syrup until smooth. Stir in the vanilla essence, then pour the mixture into an ice tray and freeze until firm. To make the mocktail, pop the litchi ice blocks into a large jug with the lime wedges, mint and cherries and top up with sparkling water.

 

Serves 6

 

Strawberry and Watermelon Frozen ‘Margaritas’

 

INGREDIENTS

4 cups chopped watermelon chunks, frozen

2 cups chopped strawberries

1 lime

Sea salt

 

METHOD

Place the frozen watermelon, strawberries and juice from the lime into a blender and blend until smooth. Run the squeezed lime around the rim of six chilled margarita glasses and dip them in the salt. Pour the margarita into the glasses, then garnish with watermelon slices, strawberries and cocktail umbrellas.  

 

Serves 6

 

 

Blueberry and Tonic Popsicles

These popsicles cleverly use straws instead of popsicle sticks – that way you can sip your drink once the popsicle has melted.

 

INGREDIENTS

1 cup blueberries, plus extra to garnish

1 tsp white sugar

1 cup water

1L tonic water, chilled, to top up

Edible flowers, to garnish

 

METHOD

In a blender, combine the blueberries, white sugar and water, and blend until smooth. Pour the mixture into six popsicle moulds. Cut three straws in half and place a small straw into each. Freeze until firm. To serve, place a popsicle in a martini glass and top up with tonic water. Garnish with edible flowers, if desired.
