BALSAMIC-GLAZED CARROTS

These balsamic-glazed carrots are as easy to make as they are to enjoy.

 

INGREDIENTS

400g Baby carrots

30ml Olive oil

30ml Balsamic glaze

 

TO MAKE

Preheat the oven to 200°C. Line a baking tray with baking paper or foil for easy cleanup. Peel the carrots and place them in the baking tray. Drizzle liberally with olive oil and balsamic glaze, and roast for 30 minutes or until the carrots are crisp on the edges and just beginning to turn soft. Serve immediately.

GRILLED CORN AND TOMATO SALAD

This fresh salad with grilled corn goes with almost any dish, from braais to spicy mains.

 

INGREDIENTS

6 Cobs of sweetcorn, dehusked

500g Cherry tomatoes

1 Green pepper, cubed

1 Small red onion, sliced

 

Dressing:

A handful basil leaves, washed

100ml Olive oil

 

TO MAKE

Heat a griddle pan on the braai grid to smoking point. Brush each cob of sweetcorn with olive oil and grill it, turning it often until grill marks appear on all sides. Once ready, keep the sweetcorn aside to cool down. Cut the cherry tomatoes in half and place them on a platter or salad bowl. Add the chopped green pepper and sliced red onion. Cut the sweetcorn from the cobs and add it to the salad. Season with salt and pepper. To make the dressing, blitz the basil and olive oil in a blender till smooth. Drizzle it over the salad when ready to serve. Toss through.

NO-MAYO BABY POTATO SALAD

This healthy twist to the classic potato favourite will be a sure winner among health-conscious guests.

 

INGREDIENTS

1 kg Baby potatoes

A handful of flat-leaf parsley, washed and de-stemmed

1 Tbsp wholegrain mustard

30ml Olive oil

Salt and pepper

 

TO MAKE

In a pot, boil the potatoes for 30 minutes or until a butter knife easily pierces the flesh when inserted. Drain and cool. In the meantime, to make the dressing, chop the parsley and add it to the olive oil in a small jar. Add the wholegrain mustard, close the jar and shake it until all the ingredients are thoroughly combined. Drizzle the dressing over the potatoes and toss to coat. Refrigerate the salad until ready to serve.
