4 Skinless chicken breasts
4 Cloves garlic, sliced
3 Tbsp butter, plus one for the sweet potatoes
2 Big sweet potatoes
Salt and pepper to taste
Preheat the oven to 200° C. In a roasting dish, place the clean chicken breasts seasoned with salt and pepper, garlic and 3 tablespoons of butter. Roast these for 20 minutes, turning them once to make sure the chicken is cooked through. While the chicken is cooking, place the sweet potato in a pot of water and cook until soft. Drain off the water and add one tablespoon of butter and mash until smooth. Serve it with the chicken and alternatively, some wilted spinach.
