2 cups mixed berries

1 tsp vanilla

1 1/2 tbsps sugar

3 tbsps water

1 – 2 tsps corn starch, sifted

1 French loaf (or bread of your choice), sliced into rounds

1 tub cream cheese

Fresh mint, to garnish

In a medium-sized saucepan combine the mixed berries, vanilla, sugar, and water on a medium heat. Place the lid on the pot. Once the berries start to simmer, crush them using a fork or potato masher. Slowly add the corn starch and mix gently while incorporating. Place aside to cool.

While the berry mixture is cooling, toast the bread to a golden colour and keep aside.

To assemble, smear each piece of toast with some of the cream cheese and top with the berry mixture. Finish by garnishing with a piece of mint.




300g packet of spinach, washed

1 tsp olive oil

1 French loaf

230g cream cheese (room temperature)

½ cup mayonnaise

½ cup sour cream

1 packet onion soup mix

½ tsp fresh cracked black pepper

1 cup mozzarella (separated)

1 cup feta


Place the spinach in a pot with a little bit of olive oil until the leaves are wilted. In a bowl, mix the cream cheese, mayo, sour cream, soup mix, and pepper. Add half the mozzarella and all the feta and spinach. Hollow out the bread along the middle. Fill the bread, and top with the remaining mozzarella. Bake at 180°C for 20 minutes, or until the top is golden. Cool slightly and serve.




1 tub cream cheese, softened
2 cups cheddar cheese, grated
1/3 cup spring onions, thinly sliced
1/2 tsp crushed red chilli flakes, optional
1 cup salami, finely chopped
Crackers and apple slices, for serving

In a bowl whip the cream cheese until light and fluffy. Add half of the cheddar cheese, spring onions, chilli flakes and half of the salami to the cream cheese. Place the mixture in the fridge for 1 hour. Take the mixture and roll into small balls and roll in the remaining salami and cheese mixture. Place on a baking tray lined with baking paper or wax paper and keep in the fridge until ready to serve.
