Try these coconut-and-cashew date balls as a tasty, healthy snack:


Makes 8



60g Cashew nuts, toasted

10 Medjool dates, pitted

½ Cup desiccated coconut, plus ¼ cup for rolling

1 Tbsp coconut oil, melted


Place the nuts, dates, ½ cup coconut and oil in a food processor and pulse to form a chunky paste. Shape teaspoonfuls of the mixture into bite-sized balls, then roll them in the remaining coconut.


Tip: Add a teaspoon of cocoa powder for a chocolate version, or have fun rolling the balls in different ingredients such as toasted chopped nuts, cocoa powder or sprinkles.

Serves 4



4 Slices wholewheat, low-GI health bread

Butter, softened, for spreading

4 Small eggs

Salt and pepper, to taste


Preheat the oven to 180°C. Using a cookie cutter, cut the bread into rounds (alternatively, you can cut the crusts off and use the bread as is). Press the bread shapes into a greased muffin tin. Crack an egg into the middle of each bread shape, then bake for five minutes until the bread is toasted and the egg is cooked. Remove and allow to cool completely.




Now, this is a totally yummy and fun way to give new life to leftovers.


Makes 8-10 bites



300g (3 Cups, packed) leftover spaghetti Bolognese (can substitute with any other long pasta)

2 Large eggs, whisked

½ Cup grated or finely chopped veggies (carrots, baby marrow, broccoli, cauliflower)

½ Cup dried breadcrumbs

½ Cup grated cheese

Olive oil, for frying


To make:


Mix all the ingredients in a bowl. Heat a little bit of oil in a non-stick frying pan over medium-high heat. Using a ⅓ cup measure, scoop up the pasta mix, pressing it into the measuring cup, then drop it into the pan. Repeat with the remaining mixture, but don’t overcrowd the pan. Fry for 2 minutes per side until golden and crispy. Drain on some paper towel and season with salt.
