What better way to enjoy a good braai than to share a giant cookie cooked over the coals? Here’s how to make it.
Nothing brings people together quite like a good ’ol South African braai. Here’s the recipe:
200g salted butter
175g soft brown sugar
165g white sugar
1 tsp vanilla extract
2 tbsp milk
1 large egg
300g cake flour
¼ tsp baking powder
¼ tsp bicarbonate of soda
250g good-quality dark chocolate, chopped
Ice cream, chocolate sauce and toasted almonds, to serve
Place the soft butter and both the sugars in the bowl of an electric mixer and cream for 8-10 minutes until pale, creamy and light. Add the vanilla, milk and egg. Add the flour, baking powder, bicarbonate of soda and chopped chocolate and mix to combine. Spray a large, cast-iron pan with cooking spray then press the cookie dough into the bottom (about 1cm thick). Cover with foil then place on a grid over medium-hot coals for 10-15 minutes or until golden brown. Place the pan in the middle of the table, top with ice cream, chocolate sauce and toasted almonds, and give each guest a spoon to tuck in!
TIP: The cookie can also be placed in a preheated oven at 160°C (fan-forced) or 180°C for 10-15 minutes or until golden brown.
