When you’re looking to make a quick yet filling meal, a toasted sandwich often comes up at the top of the list. They are also a great way to sneak some nutrition-packed ingredients into your breakfast or lunch, or make great use of leftovers in the fridge, saving you time and effort.

 

For flavour combinations that go down even better than the classic cheese and tomato combo, we’ve put together three delicious recipes that are bound to impress. Here’s how you can make glamorous toasted sandwiches with a few original uses for ingredients in your fridge and pantry.

 

 

GARLIC BREAD TOASTIE

There’s nothing quite like the love shared between garlic and bread. Add a toasted element – like this garlic bread toastie – and it’s a match made in heaven.

 

INGREDIENTS

1 loaf white bread, unsliced

1 cup mozzarella

1 cup cheddar cheese

1 cup feta cheese

4 cloves garlic, crushed

3 tbsp butter

Handful parsley, finely chopped

 

TO MAKE

In a bowl, melt the butter and add the crushed garlic and parsley. Slice the bread into 4cm thick slices. Make a slit in each of the slices making sure not to cut through the bread. Fill each slice with the three cheeses and then pinch the slit closed. Brush each bread slice with the melted butter and garlic mixture. In a medium-hot pan grill each toastie until it is golden brown on each side. Serve immediately.

 

Makes enough for 4 people.

 

 

ROASTED TOMATO, CRISPY BACON BITS AND CREAM CHEESE TOASTIE

Toasted cheese and tomato never looked or tasted this good with a few simple tweaks. With this toasted sandwich, roasted tomatoes bring a new flavour profile to the classic, while cream cheese adds a smooth, creamy finish.

 

INGREDIENTS

8 slices streaky bacon (pork free if you prefer), cooked

8 slices bread of your choice

250g cherry tomatoes

100g plain cream cheese

2 tbsp butter

1 tsp olive oil

Salt and pepper

 

TO MAKE

Preheat the oven to 200°C. In a roasting tray, place the cherry tomatoes and sprinkle with the olive oil, salt and pepper. Roast the tomatoes for 15-20 minutes until they are turning brown and crisp. Remove them from the oven once done and keep aside. Spread 4 slices of bread with the cream cheese, then layer with the bacon and tomatoes and top with another slice of bread. Place a pan over medium heat, add butter to the pan and toast the bread until it is golden brown on each side. Serve immediately.

SPICY CHICKPEA, CORIANDER AND AVOCADO OPEN-FACED TOASTIES

Turn a simple open-faced avo-on-toast into a celebration of flavours with the simple addition of spicy chickpeas that elevate the toasted sarmie while adding great texture.

 

INGREDIENTS

8 slices of bread of your choice, sprinkled with olive oil and toasted

1 can chickpeas, drained

½ tsp chilli flakes

½ tsp paprika

1 tsp olive oil

4 sprigs coriander

1 avocado, sliced

Pinch of salt

Pinch of pepper

 

TO MAKE

In a bowl, mix the chickpeas, olive oil, chilli flakes, paprika, salt and pepper. Divide the chickpeas between the slices of toasted bread and top with sliced avocado and coriander. Serve immediately.
