What’s even better is that you won’t have to get up really early to make them or think too hard before your first cup of coffee.
Whether you prefer oats, Maltabella or mielie meal porridge, you’ll find that these fun recipes work perfectly. If you’re looking to try something completely new, check out the bonus recipe at the end for coconut porridge.
VANILLA RASPBERRY PORRIDGE
This recipe is super simple, and satisfies the sweet tooth in a happy, healthy way.
Ingredients:
1 vanilla pod, seeds scraped
Coconut, sugar or honey, to sweeten
Toasted coconut flakes, to garnish
100g fresh or frozen raspberries
To make:
Stir the vanilla seeds into the porridge. Drizzle with your choice for sweetening your porridge and top with coconut flakes and fresh raspberries.
APPLE AND CINNAMON PORRIDGE
The classic combination of apple and cinnamon will remind you of a yummy apple crumble. It’s like you’re having your dessert at the start of the day!
Ingredients:
1 tbsp ground cinnamon
2 apples, grated
Yoghurt, to serve
Honey, to sweeten
To make:
Stir the cinnamon and grated apples into your favourite porridge (we love it with oats). Serve it topped with a spoonful of yoghurt, drizzled with honey and a dusting of cinnamon. This recipe creates enough for two people.
CHOCOLATE COCOA NIB PORRIDGE
This one takes a little bit more time and preparation than the other recipes, but you can make the crumble the day before. It’s chocolatey and sweet and quite indulgent.
Ingredients:
2 tbsp cocoa powder
Honey, to sweeten
100g cake flour
75g brown sugar
50g butter, softened
50g cocoa nibs
Milk, for serving
To make:
Prepare your favourite porridge (we love using Maltabella/sorghum porridge for this one) and add the cocoa powder. Sweeten the porridge with honey. To make the crumble, preheat the oven to 200 degrees Celsius. Combine the flour, sugar, butter and cocoa nibs together and spread over a lined baking sheet. Place in the oven for 15 minutes, give it a stir and bake for a further 15 minutes or until golden. Take out of the oven and allow to cool completely. Serve the warm porridge with your cocoa nib crumble and extra milk if desired. This recipe is enough for two servings
GO CRAZY FOR COCONUT
Here it is – the bonus recipe! For a complete change in pace, try this coconut porridge. You can eat it as is, or pimp it up with one of the yummy recipes above.
Ingredients:
1 cup (250ml) coconut milk
1 cup (90g) desiccated coconut, blended until fine, plus ¼ cup extra
To make:
Combine all the ingredients together in a small pot over medium heat and simmer until a thickened porridge consistency occurs – about 5 minutes. Serves two.
