STRAWBERRY AND PEANUT BUTTER PARFAITS
The name sounds totally fancy, but they’re so easy to make and incredibly good for you. The best part is, this breakfast will only take you five minutes to prepare and it’s even better when left overnight in the fridge – perfect for those busy mornings before school.
1l double cream plain yoghurt
300g strawberries, sliced
1 1/2 – 2 cups of granola
4 tbsp peanut butter
In a mason jar, layer yoghurt, strawberries, peanut butter and granola. Refrigerate overnight. Serve in the morning. It’s really that simple.
FRENCH TOAST ROLL-UPS
A quick, easy way to give the whole family a delicious cooked breakfast. Make it your go-to weekend treat and your kids won’t need convincing to get out of bed and enjoy the day.
8 slices white sandwich bread
3 tablespoons milk
1/3 cup sugar
1 teaspoon ground cinnamon
Butter, for cooking roll-ups
Cut the crusts off the slices of white bread, and flatten the bread with a rolling pin. Tightly roll up each slice of bread. In a shallow dish, beat the eggs and milk with a whisk. In another dish, mix the sugar and cinnamon.
In a large frying pan, melt the butter over medium heat and allow the butter to coat the inside of the pan. Dip each roll into your egg mixture and place in the hot frying pan. Cook your roll-ups in batches of three or four, turning them until they are browned.
Dip the cooked roll-up into the cinnamon sugar and roll until completely covered. Serve immediately.
Makes enough to feed four.
