BABY MARROW ROLLS

Serves 1

Cooking time: 10 minutes

1 baby marrow, sliced

3 tbsp of cream cheese

1 carrot, peeled and cut into strips

2 radishes, sliced

1 sprig of coriander, destemmed

 

Place the baby marrow slices on a work surface and spread a little bit of cream cheese on each slice. Then place the carrot, radishes and a coriander leaf at the beginning of the slice. Roll up each slice and enjoy.

 

 

FRUIT PIZZA

Serves 1

Cooking time: 10 minutes

 

4 rye crackers

2 tbsp of cream cheese

Slices of fresh fruit like strawberries, apples and berries

Pinch of cinnamon

 

Spread each cracker with some cream cheese. Sprinkle with cinnamon and top with a slice of fruit.

 

 

BANANA PEANUT BUTTER CHOCOLATE BITES

Serves 1

Cooking time: 10 minutes

Freezing time: Overnight

 

1 banana, sliced

2 tbsp peanut butter

50g dark chocolate

 

Line a baking tray with baking paper.
In a double boiler melt the chocolate over low heat.
Spread half of the banana slices with peanut butter and top with another slice of banana. Place a toothpick in each banana peanut butter bite.
Dip into dark chocolate and place on the lined baking tray.
Leave in the freezer overnight and defrost as needed.
