TOASTER TACOS WITH THREE-BEAN CHILLI CON CARNE, CORIANDER YOGHURT AND GUACAMOLE

 

Serves 4

1 tbsp olive oil

3 garlic cloves, crushed

1 onion, diced

1 red pepper, finely chopped

500g lean beef mince

1 – 2 tsp cayenne pepper

2 tsp paprika

1½ tsp ground cumin

1 beef stock cube, crumbled

½ tsp sugar

3 tbsp tomato paste

1 tin whole peeled tomatoes

1 tin red kidney beans, drained

1 tin butter beans, drained

1 tin black beans, drained

¾ cup water

Salt and pepper, to taste

 

Guacamole

1 whole avocado, peeled and stoned

½ cup sour cream

1 lemon, juiced

 

Coriander yoghurt

1 cup double cream yoghurt

2 tbsp olive oil

1 bunch fresh coriander, finely chopped

 

Toaster tacos

8 store-bought flour tortilla wraps

 

Heat oil in a large pan over medium-high heat. Add garlic and onion, cook for 1 minute, then add red pepper and cook for 2 minutes until onion is translucent.

Turn the heat up to high and add the mince. Cook, breaking it up as you go. Fry until golden brown and caramelised. Add cayenne pepper, cumin, and paprika. 

 

Add remaining ingredients, bring to a boil, then turn the heat down to medium to simmer gently for minimum 20 minutes until the sauce thickens (1 hour is ideal for a rich sauce). Adjust salt and pepper to taste just before serving.

 

To make the guacamole, place all the ingredients in a blender and process until smooth (if you like a chunky guacamole, use a fork to mash the ingredients) and set aside.

 

Combine all the coriander yoghurt ingredients together and season well.

 

To make the toaster tacos, place a small side plate onto the tortilla wraps and use a sharp knife to cut around them so they fit into your toaster. Bend each tortilla into a taco shape and place into the toaster. Toast for 30-45 seconds or until golden and crisp.

 

Serve the toaster tacos with the chilli con carne, guacamole and yoghurt.
