If there’s one thing that screams summer in South Africa, it’s watermelon. Check out this great way to serve everyone’s favourite treat.

 

INGREDIENTS

1 whole seedless watermelon
1L double cream yoghurt

Honey, for drizzling

Fresh fruit of your choice – strawberries, raspberries, nectarines, blueberries, mango, thinly sliced

3 x wooden skewers

Small cookie cutters (optional)

Edible flowers, to decorate

 

 

TO MAKE

Cut the watermelon into 3cm-thick slices. Use a small side plate as a guide to cut out four equal-sized rounds of watermelon – these will be your ‘cakes’.

 

Place one watermelon round on a cake stand and arrange your fruit on top. Spread yoghurt over this and drizzle with a little honey. Repeat the layers.

 

Insert the skewers into the cake from the top to stop the layers from sliding.

 

Top the cake with more yoghurt, fresh fruit cut out with cookie cutters and edible flowers. Serve immediately.

 

Serves 6-8 people.
