Serves 4


1 cup self-raising flour

1 ¼ cups brown sugar

60g butter, melted

½ cup milk

1 large egg

½ cup chopped pecan nuts (optional)

1 cup boiling water

Ice cream, caramel sauce and sea salt flakes, to serve


Combine the flour and ½ cup sugar and make a well in the centre. Pour the butter, milk and egg in the middle and whisk to combine. Add the nuts and pour into a microwave-proof bowl. Combine boiling water and remaining sugar and stir until dissolved. Pour the mixture over the back of a spoon to cover the pudding batter. Microwave on medium for 9-10 minutes or until springy to the touch and a skewer inserted into the middle comes out clean. Allow to stand for 1 minute before serving with ice cream, caramel sauce and a sprinkling of sea salt flakes.

Chocolate sauce

½ cup (125ml) honey

¼ cup (55g) castor (superfine) sugar

2 tsp loose chai tea 

½ cup (125ml) water

50g dark chocolate, finely chopped


1 cup white sugar

1 tbsp ground cinnamon

1 tbsp mixed spice

50g butter

6 store-bought waffles


Tinned pears and vanilla ice cream, to serve


For the chocolate sauce, place the honey, sugar, chai tea and water in a small saucepan over low heat. Stir to dissolve the sugar. Increase the heat to high; then add the chocolate and mix to combine.


For the waffles, combine the sugar and spices in a large bowl and set aside. Heat a large frying pan and add the butter to melt. Add the waffles to the frying pan and fry in the butter until golden and crispy – about 5 minutes. Remove from the pan and immediately cover in the chai-sugar mixture. Serve with the tinned pears, vanilla ice cream and chocolate sauce.





Serves 2


6 tbsp milk

1 tsp good-quality instant coffee

4 tbsp self-raising flour

4 tbsp brown sugar

3 tbsp cocoa powder

¼ tsp salt

1 egg, beaten

1 tbsp sunflower oil

½ tsp vanilla extract

6-8 rolos

Cream or ice cream, to serve


Combine the milk and coffee and stir until dissolved. Combine with the rest of the ingredients, except the rolos, and mix well.

Divide the mixture between two small bowls, tea cups or ramekins.

Drop the rolos into the middle of each pudding and microwave on full power for 1 minute.


Serve warm with cream or ice cream.
