These three scrumptious breakfast-in-a-mug recipes are just the thing to warm up your tummy on a crisp autumn morning!
SPINACH AND FETA QUICHE IN A MUG
1 cup baby spinach leaves
1 tbsp water
20g feta cheese, crumbled
1/4 cup cream (or milk)
2 sprigs oregano, chopped
2 large eggs, whisked
salt and pepper
Combine the spinach and water in a mug and microwave for 30 seconds or until the spinach wilts.
Crumble the feta cheese into the mug and add the rest of the ingredients. Stir to combine. Microwave on full power for 3 minutes or until cooked through. Serve immediately.
HONEY CINNAMON FRENCH TOAST IN A MUG
1/4 cup milk
1 large egg
1/2 tsp cinnamon
1 tbsp honey
1 slice of day-old bread, buttered
In a mug, combine the milk, egg, cinnamon, honey and salt.
Tear the bread into thick chunks and press them into the liquid mixture – making sure it absorbs all the liquid.
Microwave on full power for 2 to 3 minutes, stopping every 30 seconds.
Drizzle with honey and serve immediately.
BERRY CRUMBLE IN A CUP
3/4 cup mixed frozen berries
1 tsp icing sugar, plus extra to dust
1 tbsp orange juice (or any fruit juice)
2 tbsp oats
1 tbsp cake flour
1 tsp brown sugar or honey
1 tbsp butter, melted
1/2 tsp mixed spice
Combine the berries, icing sugar and orange juice in a mug and microwave on full power for 2 minutes until the berries are soft and the liquid thickens.
In a separate bowl, mix the oats, flour, sugar, butter and spice together to form a crumble and spoon it over the top of the berry mixture.
Microwave for another 3 minutes, dust with icing sugar and serve immediately.
