INGREDIENTS
1 cup cake flour
280ml sugar
½ cup cocoa powder
½ tsp bicarbonate of soda
large pinch of salt
½ cup butter, melted
2 eggs
1 tsp vanilla extract
½ cup milk
CHOCOLATE FROSTING
½ cup smooth peanut butter
115g butter, softened
2½ cups icing sugar
200ml cocoa
1 tsp vanilla extract
150ml milk
12 biscuits (for the tombstones)
100g dark chocolate, melted, for decorating
100g Oreo biscuits, crushed
Halloween sweets (bones, skulls, spiders etc) to decorate
METHOD
Mix flour, sugar, cocoa, bicarbonate of soda and salt together. Add the butter, eggs and vanilla and beat for 1 minute. Add ¼ cup of milk at a time, beating well in between. Divide between cupcake-lined muffin tins and bake at 180°C for 18 to 22 minutes or until a toothpick inserted comes out clean. Allow to cool.
Make the frosting by beating all the ingredients together until light and fluffy. Spread the frosting onto each cupcake. Fill a piping bag with the chocolate and pipe ‘RIP’ onto each biscuit with the dark chocolate and press into the top of each cupcake. Sprinkle with the crushed Oreo biscuits (the soil) then arrange the sweets on top.
TIP: To make the cupcakes extra chocolatey, fold in ½ cup chopped chocolate or chocolate chips.
