Banana muffins, blueberry muffins, strawberry muffins… When it comes to your home bakery, your family’s taste buds have probably grown used to the sweet stuff. Change things up with something savoury – and something with a kick to it!


The main ingredient of these muffins is the yummy cheddar cheese, but it’s the paprika sprinkled on top that you’ll be left to remember. Paprika is made by grinding capsicum peppers into a powder, and that peppery flavour adds beautiful red colour – and a kick – to your meal.


It’s packed with nutrients, though: just one tablespoon (6.8g) of paprika will give you 0.96g of protein, 3.67g of carbs, 2.4g of fibre and only 19 calories (79kJ). That tablespoon is also loaded with carotenoids (that’s what gives it that signature red colour), which protect your eyes and aid your night vision.


That’s the good news. The even better news is that this is a quick, simple one-cup recipe – so it’s easy to put together, and it tastes great!



1 cup self-raising flour

1 cup cheddar cheese

1 cup milk

Salt and freshly ground black pepper, to taste

Paprika, for dusting



Preheat oven to 180°C. Mix together the ingredients in a large bowl. Spoon out into muffin tins and sprinkle with paprika. Bake at 180°C for 30 minutes or until golden brown.
