Fudge is one of those classic sweet treats that can make anyone nostalgic as they think back to the days of bake sales. Makes 36 pieces


125g butter, melted

2 cups castor sugar

1 tin (385g) condensed milk

1 tsp vanilla extract


Combine butter and sugar in a large microwave-safe bowl.  Add condensed milk – do not stir. Microwave on high for about 10 minutes (stirring after 1 minute each time) or until it reaches a deep caramel golden brown. To test the fudge, smear a little of the mixture onto a cold plate or cold surface. It should set after 1 minute.  Allow to cool slightly, then add the vanilla and beat with a wooden spoon until the fudge just starts to set. Quickly pour into a 20cm square tin lined with baking paper. Mark the fudge into squares while still warm, then cut when completely cold.


Variations: Proceed with the recipe above then add the following:




Take 1 large bar of peppermint crisp and chop roughly. Add the peppermint crisp into the fudge along with the vanilla and mix in thoroughly. If you want a few pieces only mix in half of the peppermint crisp and then press in the rest as it cools.




Take 1 x 400g box of Oreos and crush in a bowl with the back of a glass to form chunks. Sprinkle over the top of the fudge in the tin while still hot and press in lightly with the back of a spoon.




Chop 100g dark chocolate. Divide the prepared fudge mix in half and pour the vanilla layer into the tin first. Allow to cool in the fridge while you fold the dark chocolate into the other half. Pour the chocolate layer over the half-set vanilla layer.
