From magazine covers and fancy tea rooms to Instagram feeds around the world, the delectable drip cake is a trend truly worth drooling over. Follow our steps below to make your very own one at home. Top tip: If you’re short on time, skip baking the cake and just get some store-bought sponge cake!


Serves 6-8


2 x store-bought vanilla sponge cakes (about 20cm wide)

250g butter or margarine, softened

2 cups icing sugar, sifted

1 tsp vanilla essence

Drop of milk, if necessary


Drip glaze

55g white chocolate, chopped

1/4 cup (60ml) cream

2 tbsp (30ml) honey

1 tsp vanilla essence

Pink food colouring


Lollipops, sweets and sprinkles, to decorate




Slice the sponge cakes in half horizontally to form four layers. Wrap each in clingwrap and freeze until firm. This helps create an even-layered cake that doesn’t fall over as the frosting sets immediately when it’s layered on the cake.

For the buttercream, whip the butter in a stand mixer with a whisk attachment until very white and fluffy. Add the icing sugar and vanilla and whip for 5 minutes until almost white and the icing sugar is completely dissolved (add a drop or two of milk if necessary).




Prepare the glaze by melting all the ingredients together in the microwave until smooth, then colour it a bright pink. Allow to cool to room temperature.


Start layering the cake by placing one frozen cake layer on the bottom. Top with a third of the frosting and spread it out using a palette knife. Top the frosting with another cake layer and repeat until all the cake layers are used. Pile the rest of the frosting on top of the cake and then spread it so it starts falling off the sides, now spread it down the sides of the cake. Scrape off the excess icing so you can see the cake underneath.


Using a teaspoon, drop small amounts of glaze down the sides of the cake to form the drips, and then cover the top with the glaze. Doing the drips first will give you more control over how the drips look.
