INGREDIENTS

800g butternut, peeled and cubed

2 tbsp olive oil

2 cloves garlic

4 carrots, peeled and chopped

3 stems celery, chopped

1 red onion, chopped

1 tin chickpeas

2 cups vegetable stock

1 tsp chilli flakes

Salt and pepper, to taste

1 tsp olive oil

Pumpkin seeds, to garnish

 

TO MAKE

In a big pot, heat the teaspoon of olive oil and fry the onions, celery, and carrots until they are golden brown. Add the chilli flakes and garlic and fry the mixture for another minute. Add the cubed butternut, chickpeas – leaving some to the side to garnish – and vegetable stock to the pot and bring it to the boil. Cook the soup on a low heat for 30 minutes or until the butternut is soft. Once it is cooked and soft, pour the soup into a blender and blend until it is smooth. Serve topped with chickpeas and pumpkin seeds and with fresh bread.
