Enjoy this healthy, nutritious snack… with a bite!
We could talk all day about the health benefits of this tasty dish. But instead of blabbing on about why chicken, onion, garlic, cucumber and yoghurt are so good for you (they’re high in protein, antioxidants, anti-inflammatories, probiotics, etc), we’re going to focus on why we like these spicy meatball wraps so much.
They taste amazing. The spicy paprika and cayenne pepper add a bit of bite (deliciously offset by the yoghurt), while the chicken and onion bring an amazing light touch to a very nutritious dish.
One quick note: be sure to squeeze as much water as possible from the cucumber using a muslin cloth to ensure the sauce remains nice and thick.
500g chicken mince
1 medium onion, finely chopped or grated
2 garlic cloves, crushed or chopped
2 tsp paprika
2 tsp ground cumin
½ tsp cayenne pepper
2 tbsp fresh coriander, chopped
¼ cup chopped fresh mint
1 large egg, beaten
1 tbsp oil
Salt and freshly ground black pepper
¼ large cucumber, grated and squeezed dry
1 cup plain yoghurt
Juice of ½ lemon
2 tbsp chopped fresh mint
2 tbsp chopped fresh coriander
6 flour tortillas
Fresh coriander, cucumber ribbons and carrot ribbons, to serve
Combine all the meatball ingredients in a large bowl and mix well with your hands. Shape into balls the size of walnuts and fry in a hot frying pan with a little oil until golden brown, caramelised and cooked through – about 5 minutes. Make the yoghurt by mixing together all the ingredients and season well to taste. Heat the tortillas, then serve with the meatballs, coriander, vegetable ribbons and yoghurt sauce.
